Puffs
Butter – I use salted butter because that is what I usually have on hand. You can use unsalted butter if you like, although you may need to add a little more salt.
Water – To make the choux dough.
Salt – I like to use Kosher salt, but you can use regular table salt if that’s all you have.
All-purpose flour – Regular AP flour is best for this recipe.
Eggs – Eggs add to the fluffy texture of the choux. Use large eggs in this recipe.
Stilton cheese, crumbled – This famous English blue cheese has a creamy texture and a characteristic taste and smell.
Bacon, cooked crispy and crumbled – Adds a salty taste and a slightly crisp texture to this wonderful little bite.
Fresh ground pepper – Always use fresh ground pepper rather than pre-ground pepper if you can.
Glaze
Egg, lightly beaten – The egg wash on the top just before baking gives the puffs a wonderful gold color.
How Do I Make Gougères French Cheese Puffs



In a medium saucepan, combine the butter, 1/2 cup of water, and the salt, and bring to a boil.
Remove from the heat and with a wooden spoon, stir in the flour. Place on the heat and cook over low heat, stirring constantly until the batter pulls away from the side of the pan and forms a smooth ball.



Remove from the heat and with a spoon, beat in one egg at a time until smooth and glossy. Let the batter cool to room temperature, then stir in the Stilton cheese, bacon, and fresh ground pepper.
Preheat the oven to 425 degrees F.

Line a baking sheet with parchment paper. Place the batter in a piping bag with a plain tip. Pipe ¾ of an inch high, rounded mounds or drop by teaspoonful, leaving 2 inches of space between.

Lightly beat the egg with a fork in a small bowl. Using a pastry brush, cover the tops of each of the puffs with the egg.

Bake for 15 – 20 minutes or until crisp and golden brown.
