Stilton Bacon Gougeres Recipe

This Stilton Bacon Gougeres recipe will have all your guests thinking that they are at a fancy French party! The bacon and Stilton together put this appetizer over the top!

Ingredients
  

Puffs
  • 1/4 cup butter
  • 1/2 cup water
  • 1/4 tsp salt
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 3/4 cup Stilton cheese crumbled
  • 2 strips of bacon cooked crispy and crumbled
  • 1/4 tsp fresh ground pepper
Glaze
  • 1 egg lightly beaten

Method
 

  1. In a medium saucepan, combine the butter, 1/2 cup of water, and the salt, and bring to a boil.
  2. Remove from the heat and with a wooden spoon, stir in the flour. Place on the heat and cook over low heat, stirring constantly until the batter pulls away from the side of the pan and forms a smooth ball.
  3. Remove from the heat and with a spoon, beat in one egg at a time until smooth and glossy. Let the batter cool to room temperature, then stir in the Stilton cheese, bacon and fresh ground pepper.
  4. Preheat the oven to 425 degrees F.
  5. Line a baking sheet with parchment paper. Place the batter in a piping bag with a plain tip. Pipe ¾ of an inch high rounded mounds or drop by teaspoonful leaving 2 inches of space between.
  6. In a small bowl lightly beat the egg with a fork. Using a pastry brush cover the tops of each puff with the egg wash.
  7. Bake for 15 – 20 minutes or until crisp and golden brown.
