- In a medium saucepan, combine the butter, 1/2 cup of water, and the salt, and bring to a boil.
- Remove from the heat and with a wooden spoon, stir in the flour. Place on the heat and cook over low heat, stirring constantly until the batter pulls away from the side of the pan and forms a smooth ball.
- Remove from the heat and with a spoon, beat in one egg at a time until smooth and glossy. Let the batter cool to room temperature, then stir in the Stilton cheese, bacon and fresh ground pepper.
- Preheat the oven to 425 degrees F.
- Line a baking sheet with parchment paper. Place the batter in a piping bag with a plain tip. Pipe ¾ of an inch high rounded mounds or drop by teaspoonful leaving 2 inches of space between.
- In a small bowl lightly beat the egg with a fork. Using a pastry brush cover the tops of each puff with the egg wash.
- Bake for 15 – 20 minutes or until crisp and golden brown.
