Ingredients

  • 2 pints cherry tomatoes
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • ½ teaspoon Italian seasoning
  • Pinch of Kosher salt or to taste
  • ¼ teaspoon black pepper
  • 1 5.2 ounce package Boursin Garlic & Fine Herbs cheese
  • 1 tablespoon fresh parsley chopped
  • crusty bread or crackers for serving

Method

  1. Preheat your oven to 400°F.
  2. Toss the tomatoes, garlic, olive oil, Italian seasoning, salt, and pepper in your baking dish until everything is well coated.
  3. Arrange the tomatoes around the outer edge of the dish. This should leave an open space in the middle.
  4. Place the entire wheel of Boursin cheese into the center of the dish.
  5. Bake for 35 to 40 minutes. The dip is ready when the tomatoes have burst and the Boursin is very soft and melted.
  6. Remove the dish from the oven. Gently stir the tomatoes from the edges into the melted Boursin, leaving the center mostly cheese. Garnish with fresh parsley and serve immediately with bread, crostini, or crackers.
