Orange Olive Oil Cake

Inspired by Mediterranean baking, this Orange Olive Oil Cake is simple to make with everyday ingredients while offering a sophisticated flavor. Serving is simple with fresh berries or sliced oranges; this homemade orange olive oil cake is a fresh and delicious treat for any occasion.

Ingredients
  

  • 2 cups All-purpose flour
  • 1 3/4 cups Granulated sugar
  • 1 1/2 tsp Kosher salt
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 1/2 cups Extra virgin olive oil
  • 1 1/4 cups Whole milk
  • 3 Large eggs
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Almond extract
  • 1 1/2 tbsp Orange zest
  • 1/4 cup Orange juice
  • 1/4 cup Orange liquor

Method
 

  1. Preheat oven to 350 degrees F. Oil 2 - 8-inch cake pans and line the bottoms with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, sugar, Kosher salt, baking soda and baking powder.
  3. In a separate bowl, add the olive oil, milk, eggs, vanilla & almond extract, orange zest, orange juice, and orange liquor. Whisk until well combined.
  4. Add the dry ingredients to the wet and whisk until just combined, be careful not to overmix.
  5. Divide the batter evenly between the prepared pans and bake for 35 – 38 minutes, or until the top is golden brown and a cake tester comes out clean.
  6. Allow the cakes to cool for 30 minutes in the pans, then remove them from the pans and allow to cool completely on a cooling rack (about 1 1/2 – 2 hours).
