Roast the Asparagus
- Preheat oven to 425°F (220°C).
- On a baking sheet, toss asparagus with olive oil, salt and black pepper.
- Arrange in a single layer.
- Roast for 10–14 minutes, depending on thickness, until vibrant green and tender but still slightly crisp.
- During the last few minutes, add the almonds to the tray to toast lightly.
Grill the Lemon
- Place lemon halves cut-side down on a grilling pan.
- Grill for 15–20 minutes, until deeply golden and lightly charred around the edges.
- This grilling process softens the lemon and gives the juice a sweeter flavor.
Make the Dressing
- Once the lemons are cool enough to handle, squeeze the juice into a small bowl.
- Whisk together with Dijon mustard; whole grain mustard maple syrup or honey; garlic and olive oil.
- Season with salt and pepper.
Assemble
- Arrange warm asparagus on a serving platter.
- Drizzle with the charred lemon mustard dressing.
- Top with toasted almonds and fresh herbs.
