Roasted Asparagus Recipe

Perfect for weeknight dinners, spring meals, or elegant entertaining, this roasted asparagus recipe is a fresh and delicious way to enjoy seasonal vegetables with minimal effort.

Ingredients
  

Roasted Asparagus
  • 1 lb. 500 g asparagus
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • ¼ cup sliced almonds or chopped walnuts
  • Fresh parsley or dill for serving
Charred Lemon Mustard Dressing
  • 1 lemon halved
  • 2 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 tsp whole grain mustard
  • 1 tsp maple syrup or honey
  • 1 small garlic clove finely grated or chopped
  • Salt and black pepper to taste

Method
 

Roast the Asparagus
  1. Preheat oven to 425°F (220°C).
  2. On a baking sheet, toss asparagus with olive oil, salt and black pepper.
  3. Arrange in a single layer.
  4. Roast for 10–14 minutes, depending on thickness, until vibrant green and tender but still slightly crisp.
  5. During the last few minutes, add the almonds to the tray to toast lightly.
Grill the Lemon
  1. Place lemon halves cut-side down on a grilling pan.
  2. Grill for 15–20 minutes, until deeply golden and lightly charred around the edges.
  3. This grilling process softens the lemon and gives the juice a sweeter flavor.
Make the Dressing
  1. Once the lemons are cool enough to handle, squeeze the juice into a small bowl.
  2. Whisk together with Dijon mustard; whole grain mustard maple syrup or honey; garlic and olive oil.
  3. Season with salt and pepper.
Assemble
  1. Arrange warm asparagus on a serving platter.
  2. Drizzle with the charred lemon mustard dressing.
  3. Top with toasted almonds and fresh herbs.
