- Preheat the oven for 350 degrees F.
- In a medium saucepan, melt the butter over medium heat. Continue cooking, swirling the pan occasionally, until it turns golden brown and smells nutty (4–5 minutes). Remove from heat and let it cool slightly.
- In a large bowl, whisk together the browned butter and sugar until combined. Add eggs one at a time, whisking well after each. Stir in mashed bananas, Greek yogurt, and vanilla until smooth.
- In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Gently sift it into the wet mixture until just combined—don’t overmix.
- Fold in chocolate chips, if using.
- Pour the batter into a greased and floured 9×5-inch loaf pan.
- Slice one extra banana lengthwise and place it on top of the batter before baking for a bakery-style look.
- Bake at 350°F for 55–65 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are fine). Bake covered with foil if the top is getting too brown in the last 20 minutes.
- Let it cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
