Ingredients to Make Brown Butter Banana Bread

Ingredients

Unsalted butter – I use unsalted butter in this recipe to help control the salt. You can use salted butter, but you may need to reduce the salt added.

Granulated sugar & brown sugar – Using both white and brown sugar adds sweetness and a depth of flavor.

Large eggs, at room temperature – Always use large eggs when cooking unless the recipe specifies otherwise.

Medium very ripe bananas – You want to use nice ripe bananas.

Greek yogurt – Adds a creamy tang to the banana bread.

Vanilla extract – I always use pure vanilla extract; the artificial stuff doesn’t taste as good.

All-purpose flour – Regular white AP flour.

Baking soda – This acts as the leavening agent for the loaf.

Cinnamon – Use good-quality cinnamon and make sure that it is fresh; older spices lose their flavor over time.

Salt – I like to use Kosher or sea salt rather than regular table salt in my cooking and baking.

Chocolate chips – Use your favorite chocolate. I use dark chocolate chips for a richer taste.

How to Make Brown Butter Banana Bread

In a medium saucepan, melt the butter over medium heat. Continue cooking, swirling the pan occasionally, until it turns golden brown and smells nutty (4โ€“5 minutes). Remove from the heat and let it cool slightly.

In a large bowl, whisk together the browned butter and sugar until combined. Add eggs one at a time, whisking well after each. Stir in mashed bananas, Greek yogurt, and vanilla until smooth.

In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Gently sift it into the wet mixture until just combinedโ€”donโ€™t overmix. 

Fold in chocolate chips, if using.

Batter in the pan ready to bake.


Pour the batter into a greased and floured 9ร—5-inch loaf pan. Slice one extra banana lengthwise and place it on top of the batter before baking for a bakery-style look.

Bake at 350ยฐF for 55โ€“65 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are fine). Bake covered with foil if the top is getting too brown in the last 20 minutes.

Let it cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!

  • Browning butter: Butter can go from browned to burnt in seconds. Stir or swirl the pan constantly once it starts foaming. When it smells nutty and turns golden with brown specks, remove from heat immediately. If your butter makes a dense foam on top, remove it with a spoon before using it.
  • Let the brown butter cool for at least 10 minutes before adding sugar and eggs. If itโ€™s too hot, it can partially cook the eggs or make the batter greasy.
  • Pan prep: Grease well and dust with flour or line with parchment paper for easy removal.
  • Due to the moisture of this loaf, youโ€™ll need to bake it long and slow. To avoid the top from browning too much, I covered my loaf with foil paper in the last 20-25 minutes of baking.
  • Wrap the bread tightly once cooled to store it on the counter; it keeps up to 3 days.
  • To freeze it, wrap slices individually in plastic wrap; it lasts up to 2 months. Reheat in a toaster oven for a freshly baked taste.
