Ingredients

  • 1 ½ pounds baby potatoes halved
  • 2 tablespoons olive oil
  • 1 packet 1 ounce ranch dressing seasoning mix
Optional Garnish
  • 2 tablespoons chopped fresh parsley chives, or green onions

Method

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
  2. Cut the baby potatoes in half and place them in a large mixing bowl.
  3. Drizzle with olive oil and sprinkle the ranch seasoning packet over the potatoes. Toss well until evenly coated.
  4. Spread the potatoes in a single layer on the baking sheet, cut side down for better browning.
  5. Bake for 30 to 35 minutes at 425°F, turning once halfway through, until the potatoes are golden brown and fork-tender.
  6. Remove from the oven and let cool for about 5 minutes.
Serve
  1. Transfer to a serving dish and sprinkle with chopped parsley or green onions if desired. Serve warm with grilled meats, burgers, or roasted chicken.
Storage
  1. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or air fryer to bring back the crispy texture.
