Measure Ingredients Accurately

Precise measurements are crucial in baking. Use measuring cups for dry ingredients, and leveling off in small, individual, stackable measuring cups is key. Liquid measuring cups for wet ingredients, use glass or plastic cups and fill, checking at eye level to ensure the right measurement. It makes sense not to use a 1/4 cup measuring cup to measure milk and spill half of it, when in a larger liquid measuring cup, you can be more accurate and with less spillage.

So, to measure flour really is crucial to a lot of baked goods. Take a spoon and fluff your flour, and then fill the appropriate cup with the flour, either using the spoon or a scoop; don’t use your measuring cup stuffed with flour. Fill the cup to overflowing and then take a knife and level off the flour; repeat as needed. Leveling should be applied to teaspoons and tablespoons of dried goods, too.

Getting a scale to weigh ingredients is also crucial. Something like cheese is best measured by using a scale. One cup of flour is 4.2 ounces, or 120 grams. Set yourself up to bake like a pro, and you will get better results.

For items like butter, I use the package as a guide, but make sure you are using it accurately. Unwrap your butter and place the measurements on the butter, and use a sharp knife to cut. Try not to cut on a slant, as this will greatly affect your measurement.

I could seriously go on and on in this section, but I will end with measuring sticky items like honey and peanut butter. Use an adjustable measuring cup, one that has an inner sleeve that slides up and down. I then use a spatula to first level it off and then to finish cleaning it out after sliding the ingredients into the bowl.

This means to have everything in one place and ready to go. Nothing worse than running around your kitchen, fetching items when you need them quickly. For example, you don’t just want to pull the flour out, but accurately measure it using a metal cup and leveling off. Have your cheese grated if needed, eggs beaten, etc. Prepping items makes the recipe flow.

Special note: You donโ€™t always need to sift flour as you used to, but it can improve texture and help create lighter baked goods, especially in cakes and delicate desserts like meringues. To lighten dense flour, you can use a whisk, which also incorporates other dry goods nicely.

There is a reason to start with butter and sugar first, as the sugar with the butter is blended and adds tiny air bubbles to the batter, making it lighter. If the recipe says to do it differently, then follow it. There is nothing worse than coming across instructions later in a recipe that say to now rest for 3 hours, and you planned to have it done right away.

Overmixing can lead to dense cakes and tough baked goods. Mix just until ingredients are combined. Sometimes the recipe will call for mixing for 2 minutes, but keep a timer, as that is hard to judge.

Baking powder and baking soda lose effectiveness over time. Check the expiry dates and use fresh ingredients for the best rise.


Use the Right Pan Size

Using the correct pan size ensures proper baking time and texture. Substituting pans can affect results. Overall, stainless steel or a metal pan will conduct heat more evenly for baking. Casseroles work well in ceramic or glass.


Donโ€™t Overbake

Check for doneness a few minutes early. If a recipe says to bake for 45-50 min. Start to check it at the 35 min. mark and plan from there. Don’t open your oven frequently, though, as you will lose the heat. But overbaking can dry out cakes and cookies. Invest in a cake tester and a thermometer, and practice the finger technique by pressing gently on the middle of the cake, loaf, etc., to see if it springs back.

Let Baked Goods Cool Properly

Cooling allows the structure to set and improves flavor and texture. This also makes sure that your baked item will not form condensation, and therefore, make your goods soggy when cooling or cause freezer damage when freezing.
